Description

Thokozani · WO Wellington

A blend of 80% syrah, 19% mourvèdre and 1% viognier from Wellington, harvested in February at 6 tonnes per hectare. Each variety ferments separately after a cold maceration: the mourvèdre in a closed tank with pump-overs and the syrah with aerated pump-overs. Malolactic takes place in steel. The mourvèdre then ages in new French barrels and the syrah with American oak staves.
